Hot Rice Cereal

Here's one of our all-time favorite breakfasts. Everyone who tries this wants the recipe, so here it is. This is a great hot cereal for cold winter mornings. It's easy to fix and takes no time at all (if your rice is precooked).

Yields: 4 cups

Ingredients Amount
Precooked short grain brown rice 2 Cups
Milk 1.5 Cups
Date pieces 3/4 Cup
Shredded coconut 1/4 Cup
Nutmeg 1/2 tsp
Cinnamon 1/4 tsp
Honey 1/4 Cup
Butter 4 tsp
Almonds 2/3 cup, roasted/halved
Sunflower seeds 4 Tbs


It's best to cook the brown rice the night before and let it cool. We use short grain brown rice and cook it 2 parts water to 1 part rice. Bring the water to a boil and add the rice, bring back to a boil and let simmer for 5 minutes. Reduce the heat to very low and let cook for 45-50 minutes.

Combine cooked rice, date pieces, coconut, milk, nutmeg and cinnamon, in a saucepan on low heat. Stir occasionally to avoid burning on the bottom. Cook rice mixture for 15 minutes until creamy in texture. Add a small amount of water or milk if it gets too thick.

While the rice cereal is cooking, toast the almonds and cut them in half after toasting.

Remove the rice mixture from heat and add butter, almonds, sunflower seeds and honey (to taste) and serve in bowls.

Everybody cleans their bowl with this one!
