Hearty Oatmeal

This is a very hearty and tasty way to make oatmeal. There are many more ingredients than is usually done in other recipes for this old time standard. So, don't be shy. it's the perfect breakfast before heading out for a day of skiing, hiking, or outdoor work where you need to "tank up" on energy.

Yields: 2 Cups

Ingredients Amount
Oats 2/3 Cup
Water 1.5 Cups
Dried Apricots 1/8 Cup
Raisins 1/3 Cup
Walnuts, Spanish Peanuts or half each 1/3 Cup
Sunflower seeds 1/6 Cup
Honey 2 Tbs, or to taste
Powdered milk 1/4 Cup


Add apricots and raisins to the water and bring to a boil. When it’s boiling add the oats, bring back to a boil, then turn down to a low simmer with the top askew on the pot. Simmer for 10 – 15 minutes depending on the quantity. Stir every few minutes, until still very moist, but not watery. When the consistency is just right, stir in the rest of the ingredients and enjoy!!

For Cold Soaked Oats use the same quantities of ingredients, but you can add the ingredients directly to the bowl you’ll eat from. Add honey to taste and then pour on enough fressh milk to cover all the ingredients. Let it soak until the oats have softened a bit. Danny likes to let his soaked for at least 10 minutes. I can eat mine almost right away. Soy milk is also a good option for this breakfast.
