Summer Vegetable Gazpacho

Gazpacho is a chilled soup commonly consumed throughout Spain since the 16th century. Its refreshing quality and seasonal ingredients make it a perfect entree for your summer dining experience. ¡Salud!

Ingredients Amount
Tomatoes 2 lg, seeded and diced
Onion 1 sm, diced
Cucumber 1 med., diced
Bell pepper Any color, 1 med., diced
Celery 2 lg. stalks, diced
Parsley 4 tsp, chopped
Chives 2 tsp, chopped
Vegetable Juice 4 Cups (V8 works well)
Red wine vinegar 4-6 Tbs.
Olive Oil 4 Tbs.
Garlic 2-4 cloves, minced
Lemon juice 2 Tbs.
Sugar 2 tsp.
White pepper 1/2 tsp.
Worcestershire 1 tsp.
Tabasco 1/2 tsp.


Combine all ingredients in a large bowl and refrigerate until very cold. Garnish with sour cream, chives, scallions, avocado and/or tortilla strips.

Yields 6 healthy servings.
