Pumpkin Hummus

We found this recipe and thought that we had to share it with you this Fall. We discovered it on BonAppetit.com. Recipe credit goes to Teri Tsang Barrett. 

Ingredients Amount
Canned pumpkin 1- 15 oz can
Tahini 2 Tblsp.
Garlic 1-2 cloves, or to taste
Olive oil 1 tsp. (or more for desired consistency)
Lemon 1/2 lemon juice, squeezed
Parsley Few sprigs of chopped fresh, or few shakes of drie
Cumin 1 tsp.
Toasted pumpkin seeds Topping, to taste
Paprika Topping, to taste

Directions

Use a food processor to purée together canned pumpkin, tahini, garlic, parsley, ground cumin, olive oil and lemon juice. Sprinkle toasted pumpkin seeds and smoked paprika on top. Serve with pita chips.
